Esperi-Enza

Let yourself be inspired by the flavors of land and sea in our Tasting Menu Experi-Enza. The menu has been structured by Chef Enza Crucinio for a journey through the flavors of land and sea.

The courses:

Oyster, Prawn, and Langoustine

Gillardeau oyster, purple prawn and natural langoustine on buttermilk, pomegranate reduction and basil oil

Seafood Sandwich

Seafood sandwich with octopus mayo and red and yellow tomato chutney

Anchovies in Saor

Anchovies in saor on “cift” potatoes, “cift” is the onomatopoeic name for sweet powdered pepper fried.

Rice with Pumpkin Cream

Acquerello rice creamed with pumpkin cream, local amberjack marinated and lightly smoked, orange powder, and wild fennel sprouts

Spaghettone with Black Garlic

Square spaghettone with black garlic and Cantabrian anchovies on turnip cream

Scorpionfish Fillet
